raspberry yummies


A friend from work brought this in to share a couple times. It's kinda like a sugar cookie with jam and it's AMAZING. I made it this week, even though Brian muttered, "Jerk...you know I don't like that kind of stuff". Yes, he is that picky. A dessert that consists of mostly butter and sugar, and he wouldn't even taste a little bit!
Whatever.
It was delicious warm out of the oven, and I wished my mom was visiting so we could eat it out of the dish with spoons and exclaim over how fantastic and fattening it tastes.

Here's the recipe if you dare to make it yourself:

Old World Raspberry Bars

2 1/2 cups flour

1 cup sugar

1 cup pecans

1 cup butter, softened

1 large egg

1 (10 oz.) jar raspberry preserves

1. Preheat oven to 350 degrees F (175 C)

2. For crumb mixture, combine everything except the preserves. With an electric mixer, beat at low speed, scraping bowl often until mixture is crumbly, 2 to 3 min.

3. Reserve 1.5 cups crumb mixture; press remaining crumb mixture on the bottom of greased 8 inch square baking pan.

4. Spread raspberry preserves to within 1/2 inch from edge of unbaked crumb mixture.

5. Crumble reserved crumb mixture over preserves.

6. Bake for 35 min. or until lightly browned. Cool completely. Cut into bars. Makes 2 dozen bars.

You'll like them! Unless you don't like raspberries....

How can you NOT like raspberries, or any berry for that matter? That's just weird!
